Zucchini and yellow squash gratin Tuesday, May 5, 2009


2 TBSP butter
2 medium zucchini sliced thin
2 medium yellow squash sliced thin
1/2 onion, chopped
2 cloves garlic, minced
salt and pepper to taste
1/2 cup heavy cream
1 cup dry bread crumbs
1/2 cup grated Parmesan cheese


Preheat oven to 425 deg. In a large skillet, melt butter over medium heat. Add zucchini, yellow squash, onion and garlic. Season with salt and pepper. Cook, stirring frequently until tender-crisp. Add cream and cook about an additional 5 minutes or until thick. Remove skillet from heat and stir half the bread crumbs and half the cheese. Spoon into a shallow baking dish and sprinkle remaining bread crumbs and cheese. Season with additional salt and pepper. Bake 8 to 10 minutes or until top is browned nicely.
