Sweet & Easy Spaghetti Squash Tuesday, October 10, 2006

Ingredients

1 small spaghetti squash
4 TBSP butter
2 TBSP light brown sugar

Directions

Cut spaghetti squash in half length wise. Scoop out seeds and discard. Place in 2 quart dish add 1/4 cup water to bottom of dish. Cover with plastic wrap and vent one corner. Cook in microwave on high for 6-10 minutes. Remove from microwave and use fork to comb squash out of shell into serving bowls. It will just pull out like spaghetti. Top with butter and brown sugar and toss to mix. Serve hot as a side dish. Enjoy!
