Gluten Free Chicken Nuggets - Monday, October 2, 2006
Bill and Meggi Weeks
1 Cup Gluten Free flour (6 cups Rice Flour, 2 cups Potato Starch Flour, 1 cup Tapioca Flour)
4 TBSP Morton Seasoning Mix
1 egg (beaten for egg wash)
2 chicken breasts (cut into nugget size pieces)
Salt to taste
Fill pan ¼ inch with canola oil. Heat oil to 350 degrees. Combine seasoning mix with flour into a rectangular shaped container that seals (such as Tupperware or Glad).
Dip chicken into egg wash and place in container. Shake the container to coat the chicken. Put into pan and cook 2-3 minutes each side. Add salt to chicken when it is on the cooling rack.
