8 inch flour tortillas
whipped flavored cream cheese (I like chives or garden veggies)
thinly sliced deli meats (I like ham, turkey or roast beef)
cheese cut into julienne strips (optional)
Place the stack of tortillas (use as many as you want) between two paper towels and microwave about 10 seconds to soften. Pinch any large stems off spinach. To make a sandwich, spread the tortilla with cream cheese or pimento cheese. Put on a layer of spinach and then a layer of meat. Lay a strip of cheese down the center if you wish. Starting at one edge, roll the tortilla tightly around the filling, holding the filling in place as you roll. Wrap the sandwich tightly in plastic wrap and chill for an hour. To serve, you can slice a roll diagonally and serve the entire roll-up for a meal. If you wish to use these as snacks or appetizers, slice crosswise into ½ inch slices and serve.
I particularly like pimento cheese with roast beef. Turkey is good with veggie cream cheese and a line of pepper cheese down the center. Ham is good with almost anything. Try out different combination until you find the one you like best.
