Corn-Bran Muffins Wednesday, March 18, 2009


4 TBSP butter, melted
2 TBSP sugar
1 egg, beaten
1 cup milk
3/4 cup all-bran cereal
3/4 cup self rising cornmeal mix
3/4 cup self rising flour


Mix cornmeal and flour. Set aside. Mix sugar and egg and stir in butter and milk. Stir in bran cereal. Stir in dry ingredients to just mix. Pour into muffin tins which have been sprayed with baking spray filling about 2/3 full. Bake at 400 deg about 18 to 20 minutes or until brown. Serve hot. This will make 12 muffins
