Graham Cookies Monday, March 16, 2009


1 cup graham cracker crumbs
1 cup all purpose flour
1/2 tsp soda
1/4 tsp salt
1 stick butter, softened
2/3 cup sugar
1 egg
1 tsp vanilla
semi-sweet chocolate chips, toffee bits or coconut


Combine the crumbs, flour, soda and salt and set aside. With a mixer, cream the butter and sugar until light. Beat in egg and vanilla. At a low speed, beat in dry ingredients. Drop dough by teaspoonfuls onto ungreased baking sheets about 2 inches apart to allow room for them to spread. Flatten and sprinkle top with chocolate chips, or toffee bits or coconut. Bake at 325 deg about 12 to 14 minutes or until lightly brown. Cool on the baking sheet about a minutes before removing to a wire rack to cool completely.
