Irish Soda Bread Tuesday, March 3, 2009


4 cups self rising flour
1 tsp baking soda
1/4 cup sugar
1/4 cup butter
1 egg
1 1/3 cups buttermilk
2 cups raisins (optional)
1 egg yolk (optional)


Mix the flour, soda and sugar. Cut in butter until mixture looks like coarse meal. Stir in raisins if using. Combine buttermilk and egg and stir into flour mixture to make a stiff dough. Add extra milk if necessary for mixture to hold together. Knead lightly on a floured board. Shape into a round loaf and place on a lightly greased baking sheet. Press down to make a flattened (not too flat) circle. Cut a deep cross into the top of the bread. Brush with a beaten egg yolk if you wish to glaze the top. Bake in a 375 deg oven about 45 minutes or until nicely browned and has a hollow sound if tapped. Slice and serve warm with the Irish Stew you got the recipe for yesterday.
