Healthy Jelly Muffins Monday, February 23, 2009


2 cups Martha White Corn Meal mix
1/4 cup Splenda
1 egg
1 cup milk
1/3 cup unsweetened applesauce
Smucker’s Sugar Free Jelly in your favorite flavor


Mix corn meal and Splenda. Beat together the egg, milk and applesauce and stir into the cornmeal mixture. Divide equally into 12 muffin tins which have been sprayed with baking spray. Carefully spoon about 1 tsp jelly into the center of each muffin. Use two spoons, it is easier. Bake in a 400 deg oven about 20 minutes. Serve warm.
