This is another good Dollywood recipe.
one potato peeled like a ribbon
4 oz chopped beef brisket
3 oz diced scallions
3 oz diced tomatoes
4 oz blue cheese crumbs
4 oz southwestern dressing
French fry the potato in hot oil until it is lightly browned. Drain on paper towels. Place on a serving plate and sprinkle on the beef, scallions, tomatoes and cheese. Drizzle with dressing.
The folks at Dollywood create their southwestern dressing by adding chipolte pepper to ranch dressing.
