Surf and Turf Wrap


This is a fine recipe from the Good Folks at Dollywood

4 oz smoked salmon
4 oz beef brisket, smoked and sliced thin
blended with:
2 oz confetti rice
2 rinds grilled pineapple diced
1 oz parmesan cheese
1 oz romaine lettuce
2 oz chipotle ranch dreesing
spinach tortilla


Warm a large spinach tortilla to soften it. Spread the salmon and then the brisket most of the way across the tortilla, just off center. Spread on the rice, pineapple, cheese and lettuce. Drizzle on a generous portion of dressing. Fold short side of tortilla tightly over filling. Turn in ends and roll to completely wrap the ingredients. Cut crosswise on an angle to serve.
