Creamy Spaghetti Casserole Monday, February 16, 2009


1 1/2 pounds ground beef
1 cup chopped onion
2 TBSP oregano
2 8 oz cans tomato sauce
Salt and pepper to taste
1/2 pound cottage cheese
8 ounces cream cheese, softened
1/2 cup sour cream
1/3 cup chopped scallions
1 TBSP green bell pepper, chopped fine
1 8 oz package spaghetti, cooked according to pkg directions


Saute beef with the onion until it loses its color and drain. Add tomato sauce, oregano, and salt and pepper. Remove from heat. In separate bowl, combine cottage cheese, cream cheese, sour cream, scallions and green pepper. Spray a 9x13" casserole with cooking oil spray. Spread half of spaghetti in the prepared dish. Cover with cheese mixture. Add remaining spaghetti. Spread meat sauce over top. Cover and chill. Remove from refrigerator 20 minutes before baking. Bake uncovered at 350 deg for 45 minutes. Can be made the day before.
