Pulled Chicken - Thursday, September 14, 2006


2 Bottles Jack Daniels Barbeque sauce (or your favorite)
6 Boneless skinless chicken breasts
Your favorite dry rub for barbeque
Salt and pepper to taste


Rub chicken generously with dry rub. Place in a 9x13 pan in a single layer and cover with foil. Place in a 350 deg oven and cook about 45 minutes, turning once to allow for even browning. In a pot, mix two bottles of barbecue sauce, salt, pepper, to taste, and one cup of water, and bring to a boil while stirring constantly to prevent burning. Lower heat to simmer and stir occasionally while pulling chicken. Pull the chicken breasts apart into long shavings with two forks (but if you get tired after doing this for two or three, feel free to wash hands thoroughly and manually continue). Add the chicken to the pot of BBQ sauce and stir until chicken is drenched. Continue to simmer while stirring occasionally for 25 - 30 minutes. Keep warm until you are ready to serve on good buns.
