Grandmother Reba’s Coconut Pie Monday, January 26, 2009


1 1/2 cups sugar
1/2 stick butter, melted
1 cup coconut
1 TBSP vinegar
2 eggs
1 TBSP cornmeal
1 tsp vanilla


Mix all ingredients and pour into an unbaked pie shell. Bake at 350 deg about 45 minutes. The pie should be firm in the center.

Now, my friend who gave me the recipe said that she adds 1/3 cup milk to the ingredients above. I will let you decide if you want to do it that way.
