Healthy Applesauce Bread Friday, January 16, 2009


1 1/3 cups plain flour
2/3 cup whole wheat flour
3/4 cup Splenda
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp baking soda
pinch of salt
1 egg
3/4 cup unsweetened apple juice
1 cup unsweetened applesauce


In a large bowl, combine both flours, Splenda, baking powder, cinnamon ,soda and salt. Beat together the egg, apple juice and applesauce. Stir into dry ingredients just until moistened. Do not over stir. Pour into two 8x4x2" loaf pans which have been sprayed with baking spray. Bake at 350 deg about 35 to 40 minutes or until they test done. Cool about 10 minutes before turning out to cool completely
