Crustless Chicken Broccoli Quiche


1 10 oz pkg frozen chopped broccoli, cooked and drained
1 1/2 cups cooked chicken, diced (or 1 can cooked, diced chicken)
1 small can chopped mushrooms, drained
2 TBSP dry onion flakes
1 cup part-skim ricotta cheese
1/2 cup low-fat plain yogurt
1/2 cup egg substitute
4 TBSP self rising flour
1/4 cup grated Parmesan cheese
2 TBSP butter, melted
1/8 tsp nutmeg


Mix chicken, broccoli, onion flakes, and mushrooms together and sprinkle into a 9 inch pie pan, which has been sprayed with cooking oil spray, saving some of the mixture for the top. Put remaining ingredients in a blender and blend until smooth. Pour over chicken mixture in pie pan. Top with the reserved chicken mixture. Bake in a preheated 350 deg oven for 30 to 45 minutes, or until a knife inserted in the center comes out clean. Let stand 15 minutes before slicing.
