Almost Lasagna Thursday, December 11, 2008


8 oz wide noodles
1 1/2 lb lean ground beef
1 or 2 cloves minced garlic
salt and pepper to taste
1 26 oz jar spaghetti sauce
1 10 oz pkg frozen chopped spinach, thawed and drained
2 cups Monterey Jack cheese, shredded
1 cup sour cream
1 egg, beaten
1 1/2 cup shredded Parmesan cheese


Cook noodles according to pkg directions. Drain and set aside. Cook beef with garlic, salt and pepper breaking it up. Cook until it loses all pink color. Drain and stir in spaghetti sauce. Combine spinach with Monterey Jack cheese, sour cream and egg. Fold spinach mixture into noodles and spoon the mixture into a 9x13 inch dish which has been sprayed with cooking oil spray. Smooth top. Sprinkle with ½ of the Parmesan cheese. Carefully spread the meat mixture over the top and sprinkle on the remaining Parmesan cheese. Bake at 350 deg about 30 to 40 minutes or until brown and bubbly.
