Easy Pound Cake Tuesday, December 2, 2008

Ingredients

3 cups biscuit baking mix
1 3/4 cups sugar
1/2 cup all purpose flour
1 cup butter, softened
6 eggs
1 cup sour cream
1 tsp vanilla extract
1 tsp lemon extract

Directions

Preheat oven to 350 deg. Spray a nonstick bundt pan (or tube pan) with baking spray. Combine all dry ingredients in the large bowl of a mixer. Add butter and run on low speed until fully mixed. Beat in eggs, one at a time. Beat in sour cream and extracts. Allow to beat an extra 3 to 4 minutes. Pour batter into prepared pan and bake about 45 minutes or until it tests done. Allow to cool about 10 minutes in the pan before turning it out to cool completely. If you wish, you can glaze the cake by mixing 1 cup confectioners sugar with 1 tsp lemon juice (or ½ tsp lemon extract) and enough water to make a glaze. Spread onto cooled cake.

This cake is great with some fresh strawberries as a simple dessert. It is not bad with a cup of coffee.
