Soft Molasses Cookies Monday, November 3, 2008


1 cup sugar
1 cup shortening
1 egg
1 cup molasses
5 1/2 cups all-purpose flour
2 teaspoons ginger
2 teaspoons cinnamon
2 teaspoons baking soda
1 1/2 teaspoons salt
1 cup warm coffee


Cream sugar and shortening. Beat in egg. Add molasses. Mix in flour and spices; gradually add coffee. Drop by spoonfuls on greased cookie sheet. Bake 8 minutes at 375 deg. This recipe makes a LOT of cookies, but they freeze well and keep well and make fine little gifts.
