Easy Sweet Potato Cobbler Friday, October 31, 2008


1 stick butter
1 cup self-rising flour
1 cup sugar
1 cup milk
2 cups cooked but firm, peeled and cubed sweet potatoes
1 cup sugar
1/2 cup light brown sugar
1 1/2 cups hot water
1 tsp vanilla
1 tsp nutmeg


Melt butter in a 9x13 inch baking dish. Mix together the flour, 1 cup sugar, and 1 cup milk; pour over the melted butter. Do not stir. Mix remaining ingredients and spread evenly over melted butter and batter. Do NOT Stir. Bake at 350̊ for 45 minutes or until lightly browned.
