Honey Glazed Roasted Sweet Potatoes Wednesday, October 8, 2008


1/3 cup olive oil
3 1/2 lb sweet potatoes, peeled, cut into 1 inch chunks
1/2 tsp ground cayenne pepper
salt to taste
1/2 cup honey
1/4 cup lime juice
1/2 tsp nutmeg


Preheat oven to 425 deg. Toss sweet potatoes with oil, cayenne and salt in a large bowl until coated. Transfer to a baking sheet with sides and roast until fork tender, about 25 minutes. Be sure that cayenne is evenly dispersed. You do not want to bite into lumps of it. Whisk honey, lime juice and nutmeg in a small bowl. Once potatoes are tender, coat with glaze and roast an additional 5 minutes.
