Ingredients

1 lb ground beef
1 onion chopped
1 can pinto beans
1 can whole kernel corn
1 can diced tomatoes
1 pkg taco seasoning mix
1 can black beans
1 can tomatoes with green chilies
1 pkg Hidden Valley Ranch Dressing mix (dry)
1 or 2 tsp Tony Cachere’s Cajun seasoning (optional)
diced jalapeno (optional)

Directions

Brown ground meat and chopped onions. Add salt and pepper to taste. Drain off any grease. Add all remaining ingredients. Do not drain cans-add everything to the pot. Stir well and add 1 cup water to pot. Ms. Kennedy says to add the Cajun seasoning and jalapeno if you want it hotter. Leave out if you do not. Bring to a boil, reduce heat and simmer for 20 to 30 minutes. Serve with shredded cheese, sour cream and tortilla chips.
