Lemon Basil Squares Tuesday, August 19, 2008


2 sticks butter
2 cups flour
3 cups sugar, divided
1 TBSP lemon zest
1/2 cup lemon juice
4 eggs
4 TBSP flour
3 to 4 TBSP fresh basil, sliced into a very thin chiffonade


Mix butter, 2 cups flour and 1 cup sugar to form crumbs. Press into a lightly greased 9x13" pan. Bake at 350 deg about 15 to 20 minutes or until lightly browned. Mix the remaining sugar with 4 TBSP flour. Beat in eggs one at a time. Beat in lemon juice and lemon zest and stir in basil. Pour over the hot pastry and return to the oven for another 25 minutes. Allow to cool and cut into squares. If you like, you may sift with powdered sugar while still hot.
