Orange Cranberry Biscuits Friday, June 27, 2008
2 cups self rising flour
4 tsp sugar
zest of 1 medium orange
1 stick cold butter
3/4 to 1 cup cold milk
1 cup dried cranberries (Craisins)
Preheat oven to 425 deg. Combine flour and sugar. Stir well and stir in zest. Cut in butter with a pastry cutter or two knives until mixture is crumbly. Stir in cranberries. Add milk in a slow stream while stirring until a slightly sticky dough forms. Turn out onto a lightly floured board and shape into a 1/2 inch thick round. Cut into 2 inch biscuits. Rework dough until all is cut. Bake about 15 to 18 minutes or until brown. Serve hot, warm or cold.
