Banana Crunch Breakfast Loaf Monday June 23, 2008


2 cups plain flour
2 tsp baking powder
1/2 tsp salt
2 eggs
3/4 cup light brown sugar
1/2 cup butter, melted
2 large, ripe bananas (about 1 cup)
1 tsp vanilla
1/2 cup chopped walnuts
3/4 cup low-fat granola (without raisins), broken up.


Preheat oven to 350 deg. Coat 3 mini loaf pans (5 3/4x3x2 ½ inch) with baking spray. In a large bowl, mix together the flour, baking powder and salt. Make a well in the center of the dry ingredients. In a smaller bowl, combine eggs, brown sugar, and melted butter and mix until smooth. Stir in bananas which have been mashed and vanilla. Stir liquid mixture into dry just until thoroughly combined. Do not over beat. Stir in walnuts and divide equally into the 3 prepared pans. Sprinkle crushed granola evenly over the batter. Bake for 30 to 35 minutes or until set and golden around the outside. Allow to cool in the pan on a rack for 5 minutes. Remove from pan and serve
