Chicken Caesar Salad Tuesday, June 10, 2008


4 Chicken Breast Halves
Caesar Salad mix for 4
Caesar salad dressing (Paul Newman is good)
feta cheese, crumbled
salt and pepper to taste


Place the chicken breasts between sheets of waxed paper or plastic wrap and hammer with the side of a rolling pin, a meat hammer or the side of a heavy knife until flat and even in thickness. Dust with salt and pepper and place about 2 to 3 inches from the broiler. Cook about 4 or 5 minutes on each side. Brush heavily with the Caesar dressing and allow to cook about another 3 minutes or until it starts to brown. Arrange salad greens in a large bowl and add dressing as desired. Slice breasts diagonally and scatter over the top. Sprinkle with feta cheese and serve immediately. Pass the dressing for those who want more.
