Tuscan White Bean Dip Monday, May 12, 2008


1 can white cannellini beans, drained and rinsed and drained again
3 cloves garlic
2 green onions, sliced thin
2 TBSP olive oil
1 lemon
hot pepper sauce
1 tsp fresh rosemary


In food processor, combine beans and garlic. Add rosemary, green onions, and olive oil. Squeeze in lemon juice and hot pepper sauce. Process until smooth. Taste and correct seasonings (that means check to see if you have enough hot pepper sauce). Scoop into a dish and serve with toasted pita wedges or your favorite chip or even with veggies.
