Ritz Honey Butter Chicken Tuesday, May 6, 2008

1 sleeve Ritz Honey Butter crackers, crushed
1 or 2 boneless, skinless chicken breasts
1/2 cup buttermilk
2 large eggs
1/4 tsp Season All seasoned salt


Mix eggs and buttermilk in a bowl and set aside. In a large ziploc bag, crush the Ritz crackers and put into another bowl, Add spices and mix together. Cut chicken breasts into strips and then cut strips in half. Dip chicken in buttermilk/egg mixture and then roll in cracker crumbs. Place pieces into a 9x13" pan which has been sprayed with cooking oil spray or spread with 1 TBSP olive oil or canola oil to keep chicken from sticking. Bake in a 350 deg oven about 35 minutes or until crackers are brown
