Pork Chops in Orange Sauce Monday, April 7, 2008


1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp black pepper
4 pork chops (boneless works nicely)
3/4 cup orange juice
2 TBSP brown sugar
1/2 tsp grated orange zest (optional)


Mix paprika, garlic powder and pepper and rub over both sides of the pork chops. Spray a non stick skillet with cooking oil spray and brown the chops over medium high heat. Combine orange juice, brown sugar and orange zest and pour over chops. Cover and simmer about 15 to 20 minutes or until juices run clear. Remove chops and keep warm. Increase heat and reduce cooking liquid until it starts to thicken. Pour over chops and serve. If you want to increase the amount of sauce, stir 1 TBSP cornstarch into 1/4 cup cold water. Remove chops and bring the cooking liquid to a boil. Stir in cornstarch mixture and stir constantly until the sauce is thick and clear.
