Salsa Chicken Wednesday, March 26, 2008


4 to 6 boneless, skinless chicken breasts
1 cup salsa
1 cup Mexican cheese blend


Spray a 9x13 inch baking dish with cooking oil spray. Place the chicken breasts in a single layer. Spread salsa evenly over them. Cook, uncovered, in a 350 deg oven about 30 minutes or until the juices run clear if chicken in pierced with a thin knife. Sprinkle on cheese and return to oven until cheese is melted. Serve with rice and a salad for a great, low fat meal.
