Country Bean Bake Wednesday, March 19, 2008


2 cans pinto beans, drained reserving 1/2 cup liquid
2 TBSP cooking oil, bacon drippings will work
1 cup sliced onions
8 to 16 ounces cubed cooked ham
1/2 cup ketchup
1/4 cup molasses
1 TBSP vinegar
1 tsp salt
2 tsp Worcestershire sauce
1 TBSP mustard
1/2 cup reserved bean liquid


Add oil (or bacon drippings) to a skillet over medium heat; add onion and cook for 5 minutes. Layer cooked drained beans, onions and ham in a 2-quart casserole. Combine remaining ingredients and pour over the mixture. Bake at 325 deg for 1 hour.
