Green Rice Tuesday, March 18, 2008


2 to 3 cups cooked rice
2/3 cup green pepper, finely chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
1/3 cup chopped parsley
1/4 cup olive oil
1 cup approx finely cut leftover asparagus
1 1/2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 can cream of celery soup
1 cup cheddar cheese, grated


Preheat oven to 350 deg. Butter a 2-quart casserole. Heat oil in a heavy skillet. Add pepper, onion, celery and cook until tender crisp. Stir in parsley. Combine all remaining ingredients; pour into casserole. Cover and bake for 45 minutes. Serve warm.
