Baked Penne with Vegetables and 3 Cheeses Thursday, February 28, 2008

Ingredients

16 oz penne (or ziti)
2 cups broccoli florets
2 cups sliced mushrooms
2 TBSP butter
4 cups spaghetti sauce
2 cups mozzarella cheese, shredded
1 cup ricotta cheese
1 cup Parmesan cheese

Directions

Fill a large pot with water and bring to a boil. Add penne and cook until just barely tender but still very firm. Add broccoli and cook about another 2 or 3 minutes. Drain. While the pasta is cooking, saute mushrooms in butter over medium heat until lightly browned. Spray a 9x13" dish with cooking oil spray. Toss the pasta with the spaghetti sauce, mushrooms, broccoli, half of mozzarella cheese, ricotta cheese and half of the Parmesan cheese. Turn into the prepared pan. Mix the remaining cheeses and sprinkle on top. Loosely cover with foil and bake in a 400 deg oven about 20 minutes or until bubbly. Remove foil and bake about 10 minutes more or until nicely browned.
