Good and Easy Stir Fry Friday, June 22, 2012


Based on the good food at Genghis Grill

1 lb chicken breast, cubed
1 TBSP cooking oil
1 cup celery
1 cup carrot
1 cup mushrooms, sliced
1 cup sugar snap or snow peas, strings removed
½ cup green onion, cut into 1 inch pieces
3 TBSP water with 1 TBSP corn starch mixed in


In a wok or large skillet over a small burner, heat oil until smoking. Add chicken and cook stirring until all color is gone (about 2 or 3 minutes). Remove chicken to a plate. In the same skillet, add the celery, carrots and mushroom and cook, stirring until the mushrooms give up their liquid and the veggies are tender crisp. Stir in peas and onion and cook about 30 seconds or until the peas change color. Stir in corn starch and chicken. Cook, stirring constantly until thick. Serve at once.
