Valentine's Day Breakfast Burritos Wednesday, February 6, 2008

Ingredients

1/2 lb sausage
1 small onion, chopped
1/2 small green bell pepper
1/2 tsp salt
1 tsp ground black pepper
1/2 tsp ground cumin
2 cups cubed hash brown potatoes
4 eggs
1/4 cup milk
9 flour tortillas
1 cup shredded cheddar cheese

Directions

Brown the sausage with the onions and bell peppers. Drain the fat, then add the spices and diced potatoes. Stir to mix and to heat the potatoes through. Whisk the eggs and milk slightly. Add to sausage/potato mixture over a medium high heat. Mix together to scramble eggs into the mixture. Warm flour tortillas in the microwave or on a hot griddle. Place the sausage/potato/egg mixture on warmed tortilla and sprinkle with shredded cheddar cheese. Fold in the sides of the tortilla and roll tightly to make a burrito. Serve with salsa of your choice.
