Peanut Butter Stew Thursday, January 31, 2008


1 lb beef, in small cubes
2 medium onions, chopped
2 cans diced tomatoes, undrained
1/2 inch piece fresh ginger, chopped
3/4 cup peanut butter
1 tsp hot sauce
2 cups water


Brown beef in a heavy pot. Add onions and ginger and continue to saute until onions are transparent. Add tomatoes and water and bring to a boil. Cover and simmer about 20 minutes. Mix some of the hot broth with the peanut butter and stir into the meat mixture with the hot sauce to taste. Simmer about 30 minutes, uncovered, stirring occasionally to prevent sticking.

This is great on rice.
