Country Cornbread Eggs Tuesday, April 10, 2012


1 ½ cups cornbread, crumbled
2 cups Cheddar cheese, shredded
½ lb cubed ham (or ½ lb sausage, fried, crumbled and drained)
6 eggs, beaten
1 ½ cups milk
1 TBSP hot sauce (or to taste)
¼ tsp black pepper
½ tsp salt


In a 9x13 inch pan which has been sprayed with cooking oil spray, sprinkle the cornbread evenly. Sprinkle ham (or sausage) over cornbread and the cheese over the meat. Beat together all remaining ingredients and pour over bread and cheese mixture. Bake at 375 deg for about 40 minutes or until eggs are set in the middle. Serve hot.
