Ingredients

2 Tilapia filets
Clarified Margarine – 1 tsp.
Chopped Garlic – ½ tsp.
Scallops – 2 ea.
41/50 Shrimp – 5 ea.
Jalapeno Slivers – 6 ea.
Blackening seasoning – 1 dash
White wine – 1 TBSP.
Bloody Mary Mix – ¼ cup
Capers – 10 ea.
Green Olives - Small – 3 ea.
Diced tomatoes – ¼ cup

Directions

1Sautee tilapia for two minutes on each side and place in 375 degree pre heated oven for five minutes.
2.Heat margarine over medium heat
3.Add garlic, scallops and shrimp. Sauté for 1 minute.
4.Add jalapeno strips and seasoning. Continue cooking for 30 seconds.
5.Add white wine to mixture and reduce.
6.Add and combine all remaining ingredients. Do not overcook.
7.Remove from flame and pour over fish.
Note: this sauce needs to be bright and fresh. Do not overcook.
