Traditional Pot Stickers Monday, January 21, 2008


Thoai Ho of the T. Ho Restaurant

8 oz (net weight) of ground Pork
2 green Scallions (green part only) diced
1 head of Napa Cabbage, diced
1/4 tsp of Salt
1 pinch of White Pepper
1 tsp of Oyster Sauce
1/4 tsp of Sesame Oil
Pot Sticker Skins


Combine ground pork, scallions, napa cabbage, salt, white pepper, oyster sauce, and sesame oil. Allow it to sit about 20 minutes to let everything soak in. Pull off a small ball of the mixture and place in the center of a pot sticker skin. Wrap the pot sticker skin, and then seal the edges with water or an egg wash. Brush frying pan with oil. Cook the pot stickers about 1 minute until they start to stick to the pan. Then add 1 cup of water, cover, and simmer for about 10 minutes. Remove excess water, and then heat pot stickers in the pan until the skin is crisp.
