Red Beet Brownies Friday, January 11, 2008

Ingredients

1/2 cup butter, melted
1 1/2 cups sugar
2 eggs
2 tsp vanilla
1 1/2 cups plain flour
1 tsp each baking powder and soda
1/2 tsp salt
1 cup red beets, chopped very fine (I use the food processor)
1/3 cup red beet juice
1 cup rolled oats
1/2 cup coconut
1/2 cup nuts

Directions

Blend the melted butter and sugar completely. Beat in the eggs and vanilla. Stir in all remaining ingredients except the nuts, and mix completely. Turn into 2 lightly oiled 9x9" pans. Sprinkle nuts evenly on top. Bake in a preheated 350 deg oven for 30 minutes or until brown. Allow to cool in pan before cutting into squares.
