Roast Beef and Swiss Panini Monday, December 5, 2011

Ingredients

Cuban Bread 2 slices
Roast beef-sliced thin 4 slices
Swiss cheese 2 slices
Mushrooms 2 ea-sliced
Green peppers 6 strips
Onions ¼ cup

Directions

Heat panini grill (if you do not have a panini grill, a George Forman Grill works nicely) and get it hot. Pre-saute mushrooms, green peppers and onions in oil until cooked soft. Brush 2 sides of bread with olive oil. Place oil side of one piece of bread on grill then add one slice of cheese then beef then top with vegetabls and cheese. Place other bread slice on top with oiled side up then press down and grill for 2 minutes until bread is browned and cheese melted.
