Quick Summer Time Pasta Wednesday, July 13, 2011


This is the return of an old favorite

2 cups chopped, seeded tomatoes (about 2 large tomatoes)
2 cups chopped, baby spinach
1 medium green bell pepper, cubed
2 cloves garlic, minced
8 oz mozzarella cheese, cubed
1 tsp salt
1/2 tsp pepper
¼ cup olive oil
12 to 16 oz penne pasta
2 TBSP balsamic vinegar


Combine the tomato, spinach, bell pepper, garlic, cheese, salt, pepper and oil and toss to mix. Set aside. Cook pasta according to pkg directions. Drain. Immediately toss with the tomato mixture and then toss with the balsamic vinegar. Serve at once.
