A Dollywood Recipe

Cup Cake Mix:
1 1/2 cups flour
1 cup sugar
3 eggs
1 tsp baking soda
1 tsp salt
1/3 cup cocoa powder
1/2 cup vegetable oil
1 cup water
1 tsp vinegar
1 cup confectioners’ sugar
1 cup creamy peanut butter
5 TBSP butter- room temperature
¾ tsp vanilla extract
1/3 cup heavy cream


Cup cakes"
Mix all of the ingredients well with a mixer. It should be brown and smooth and free of lumps. Spoon into muffin pans with cupcake liners. Bake at 350 deg for 25 minutes. Cupcakes will turn out moist and delicious.

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.
