1 lb orange roughy or tilapia filets
1 8 oz can tomato sauce
1 4 oz can sliced mushrooms, drained
1/2 green bell pepper, diced
1 stalk celery, diced
3 TBSP water
1 1/2 TBSP instant minced onion
1 tsp chicken bouillon granules
Arrange fish in a 13x9 inch microwave safe dish which has been sprayed lightly with cooking oil spray. Stir together remaining ingredients and pour evenly over fish. Cover tightly with plastic wrap, turning back one corner to vent. Microwave at high power for 8 to 10 minutes, rotating dish after about 4 minutes, until fish flakes easily with a fork. Let stand about 5 minutes before serving to blend flavors.
This is great served on brown rice with a green salad for a summer supper.
