Peanut Butter and Jelly Muffins Tuesday, December 11, 2007

Ingredients

2 cups plain flour
1 TBSP baking powder
1 cup milk
2 eggs
1/2 cup sugar
1/2 cup creamy peanut butter
1 tsp salt
1/2 cup strawberry jam or preserves (or some other flavor you like better)

Directions

Preheat oven to 400 deg. Stir flour, baking powder, and salt together. Place milk, eggs, sugar and peanut butter in a blender or food processor and blend until completely combined. Pour over dry ingredients and stir just enough to mix. Line 12 muffin cups with paper liners. Fill each cup about 1/3 full of batter. Spoon about 1 tsp jam into center of each muffin and add batter to fill the cup about 2/3 full. Bake 15 to 20 minutes or until nicely browned. Remove from oven and allow to cool about 5 minutes before serving.
