4 TBSP butter
1 cup flour
1 cup milk
1 tsp salt
1 tsp baking powder
1 lb cheese, grated (Cheddar, Monterey Jack, or a mix)
2 10 oz pkg chopped frozen spinach, defrosted and drained completely
Preheat oven to 350 deg. Melt butter in 9x13" pan in the oven. Remove pan from oven and allow to cool slightly. Beat together eggs, flour, milk, salt and baking powder. Add cheese and well drained spinach. Mix well and pour into buttered pan. Bake 30 to 35 minutes or until it feels firm in the center. Allow to cool 10 to 15 minutes before cutting into 1 inch squares.
