Pumpkin Oatmeal Cookies Monday, November 26, 2007

Ingredients

1 cup plain flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp soda
1 1/2 cups light brown sugar
1/2 cup (1 stick) butter
1 egg
1 tsp vanilla
1/2 cup canned pumpkin
2 cups oats (Old Fashioned works best) uncooked
1 cup dried cranberries

Directions

Preheat oven to 350 deg. Lightly spray baking sheets with baking spray (or line with parchment paper). Stir flour, spices, salt and soda together. With the beater, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Add pumpkin and continue to beat until it is completely blended. Add oats and mix well. Stir in cranberries by hand. Drop dough by TBSPfuls about 2 inches apart on cookie sheets. Bake about 12 minutes or until lightly browned. Cool on cookie sheets about a minute before removing to rack to cool completely. Between 2 and 3 doz depending on how big your TBSP is.
