Light Shrimp Saute Friday, February 18, 2011


½ cup onion, finely chopped
4 cloves garlic, minced
1 can diced tomatoes with juice
1 TBSP parsley, chopped
1 tsp Italian seasoning
1 lb precooked shrimp
4 oz feta cheese, crumbled


In a non stick skillet sprayed with cooking oil sauté onion and garlic until translucent. Add tomatoes, parsley, and Italian seasoning. Bring to a boil, reduce heat and simmer about 25 to 30 minutes until thickened. Remove tails and stir in shrimp and half of feta cheese. Cook just until shrimp is hot through. Turn into a serving dish and sprinkle with remaining cheese. Serve hot with rice.
