Fish in Foil with Vegetables Thursday, January 6, 2011

Ingredients

1 to 1 ¼ lb fish fillets (from any good white fish)
1 TBSP olive oil (or olive oil spray)
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
1 cup zucchini
1 cup mushrooms, sliced
1 cup red onion, sliced thin
2 TBSP fresh parsley (optional)

Directions

Preheat oven to 450 deg. Divide fish into four portions and place each portion in the center of a 12 inch square of heavy duty foil. Brush fish with oil and sprinkle with garlic powder, salt and pepper. Divide vegetables evenly among the four pieces of fish. Fold and seal foil. Place foil pouches on a baking sheet with sides and bake for 20 to 30 minutes. Fish should flake easily when tested with a fork. Fold back foil and sprinkle with parsley if you wish. Serve still in the foil.
