Orange Cheesecake Wednesday, November 14, 2007


1 1/2 cups cookie or graham cracker crumbs
1/4 cup sugar
6 TBSP melted butter
24 oz cream cheese
1 1/3 cups sugar
4 eggs
1/4 cup frozen orange juice concentrate, thawed
2 tsp orange zest
2 TBSP flour
1 tsp vanilla


Combine crumbs with sugar; mix in melted butter until well moistened. Pat into a 9 inch springform pan. In a medium bowl, cream together the cream cheese and sugar. Add eggs and beat for about 3 minutes on medium with an electric mixer. Beat in orange juice, zest, flour, and vanilla. Beat for another 2 minutes. Pour batter into prepared crust. Place in a preheated 300 deg oven and bake for one hour. Turn off heat and allow to sit in the oven for one hour. Chill before removing ring from pan and serve cold.
