Handy Bran Muffins Friday, November 2, 2007


This is an old recipe that several of you have asked about. It is great during the busy holidays when you need to impress someone with how easy it is for you to have good, hot muffins. This mixture will keep in the refrigerator as much as 2 weeks and is ready to bake when you want it.

1 cup each, all-bran cereal and hot water
1 1/2 cups sugar
3/4 cup cooking oil
2 eggs
2 cups buttermilk
2 1/2 cups plain flour
2 1/2 tsp baking soda
1 tsp salt
2 cups raisin bran cereal


Pour hot water over the all-bran, allow to stand. In a large bowl, mix sugar, oil, eggs and buttermilk. Mix together all dry ingredients. Stir dry ingredients and all-bran mixture into milk mixture. Add raisin bran and stir to mix. Fill muffin cups 2/3 full and bake in a 375 deg oven about 20 minutes or until brown.
